Menu Plan Monday: Week of July 14, 2013

My goodness. I just looked at the calendar and July is half gone. Summers always go by so quickly for teachers. Sigh. I can’t believe I’m admitting this, but I do miss our daily school routine. I miss getting a lot done in a day.  But then again, I know God has a season for everything. It has been a difficult year.  It is time to relax, sleep late, cook more from scratch, blog, enjoy time with my kids, swim in the pool, get caught up on some household chores, and watch movies. 

We have been eating at home more and I am attempting to cook more from scratch this summer . . . you know, like I used to do before life became so crazy.  During the school year I was feeling a bit guilty for serving a lot of quick meals. 

I am rambling, I know, so I’ll move on to the meal plans.  This week will be a little different because hubby and I will be without children for a few nights.  Woohoo! Love my kids to pieces but it is nice to have some quiet around here.

Sunday – shrimp tacos, fish tacos, rice, refried beans, homemade salsa
Made from fish I got at Food Lion a while back on sale. Needed to be used.

Monday – chicken fried rice
Made with chicken I got at Harris Teeter a few weeks ago, buy 2 get 3 free.

Tuesday – black beans and rice
I have some ground beef in the freezer that is already browned and seasoned. When you get a good deal on ground beef, go ahead and brown some of it for easy meal preparation.

Wednesday – breakfast
Eggs are buy 1 get 1 free at Harris Teeter this week!

Thursday – leftovers
Leftover black beans and rice or breakfast burritos.

Friday – Indian food

Saturday – no kids, date night?
